Estamboli Polo \ Dami goje (Persian tomato rice) recipe

📌Ingredients:
- 3 tomatoes
- 2 potatoes
- 2 cups of Persian rice
- 1 tbsp tomato paste
- 1 tbsp salt, turmeric, and black pepper
- 1 onion
- vegetable oil
- water
📌preparation:
- mix 2 cups of rice and 2 cups of water and let it rest for 2 hours.
- peel and chop the tomatoes.
- peel and chop the onion.
- peel and chop the potatoes
- add 3 tbsp vegetable oil to a pot and start frying the onion for 5 mins.
- add the potatoes to the onion and fry for 10 mins.
- add 1 tbsp salt, turmeric, and black pepper and fry them for 2 mins.
- add 1 tbsp tomato paste and fry for 2 mins.
- now add the tomatoes and fry them all for 15 mins.
- add the rice and water to the frying ingredients.
- do not close the pot and keep cooking the rice and other ingredients on medium heat till the water evaporates.
- after the water is evaporated, add 100g of butter to the rice.
- use a piece of fabric as a steamer and close the pot.
- cook on low heat for 1.5 hours.
