天妇罗 Shrimp Tempura
天妇罗炸虾 (tempura shrimp)和一般的油炸食物不太一样。它的面糊的特别轻盈,而且酥酥的。天妇罗的面糊所用原料特别简单,一般就是蛋黄,水和低筋面粉。但是要掌握它的技巧炸到完美的效果,却不是那么容易。各种比例的配方我试过很多次,用小麦淀粉取代低筋面粉,大幅度降低的天妇罗的难度,即便是家庭的简单制作,也能炸出令人满意的天妇罗。
天妇罗 材料:
明虾 500g
蛋黄 1
冰块 1
水 125克 1/2 杯
澄粉 60克 大概是半杯,比较蓬松的量法
蔬菜油用来炸虾
香油 5克 1 小勺
天妇罗蘸酱 适量
shrimp tempura
ingredients:
while shrimp 500g
egg yolk 1
ice cube 1
water 125g 1/2 cup
wheat starch 60g about 1/2 cup (measured loosely)
vegetable oil for frying
sesame seed oil 5g 1 teaspoon
tempura say sauce as needed
