Braised Pork with Kimchi[Feat. Leftover Kimchi]
1T = 1Tbs / 1t = 1tsp
For Serving One,
For this recipe you’ll need:
1 LB Pork Belly, 300g Fermented Kimchi, 2 Scallions, 1/2t Sesame Toasted, 2 Kombu(Dried Kelp),1 Hot Green Pepper, 200mL Water

[ Seasoning ]
1Cup Kimchi Juice, 2T Red Pepper Powder, 1.5T Soy Sauce, 1/2T Honey, 1T Garlic Minced, 1/2 Black Pepper Ground, 2T Mirin

Cooking Difficulty Level : Normal
Estimated Cooking Time: 90 Minutes
Cooking Points:
1) Use Kombu for the better flavour.
2) Use Kimchi Juice for authentic aroma.

1. Julienne Onions to 0.7cm thickness, cut scallions to 4cm length sizes, and slice hot pepper on a bias to 1cm thickness.

2. I will be using leftover Kimchi for this dish today, reserve one cup of Kimchi juice.

3. Place water into a pot, vegetables go in after. Add all the seasonings at once, and put Pork Belly in.

4. Once it starts rapidly boils, turn the heat to medium and braise for an hour.

5. When the meat becomes nice and tender turn the heat off and let it cool down slightly.

6. Cut the meats into bite sizes as you want.

7. Ta-Da! Braised Pork with Kimchi is ready to serve! Bon Appétit!
