Homemade Pickled Radish with Fried Chicken in a Spicy Sauce

For this recipe you’ll need(one serving):
4 Chicken Drum Sticks, 1C Tempura Powder, 1t Curry Powder, 1 Egg,
1/2C Cold Water, 1/2C Panko, 500mL Vegetable Oil, 2T Peanut Toasted

[ For Pickled Radish ]
1 Small Daikon Radish, 1C White Vinegar, 1C Cane Sugar, 1/2C Water, 1/2T Salt, 2PC Dried Seaweed(Kombu)

[ For Spicy Sauce ]
2T Cooking Liquor(Mirin), 2T Soy Sauce, 5T Cane Sugar, 2T Red Pepper Powder, 3T Red Pepper Paste

Cooking Difficulty Level: Difficult
Estimated Cooking Time: 75 Minutes
1) We will start with making Pickled Daikon Radish first. Peel the skin and dice it up to bite sizes.

2) Place all ingredients for pickle seasoning: 1C White Vinegar, 1C Cane Sugar, 1/2C Water, 1/2T Salt, 2PC Dried Seaweed all together into a pot, and bring it to boil. Take off from the heat, chill it down.

3) Pour the chilled vinegar mixture onto diced radish. Store in the fridge for a night. And Pickled Radish is ready to serve.

4) Marinate Chicken Drumsticks with 1C Tempura Powder, 1t Curry Powder, 1 Egg, 1/2C Cold Water and rest it in the fridge for 30 minutes.

5) Mix 1C Tempura Powder, 1/2C Panko together for coating the Drumsticks later.

6) Coat Chicken Drumsticks lightly in Panko and Tempura Powder mixture.

7) Preheat frying oil for 5 minutes on a high heat.

8) Add in Chicken carefully, fry it for 10 minutes on Medium-High heat.

9) Take the Chicken out and reheat oil for 2 minutes. Deep fry Chicken once more in a reheated oil for 4 ~ 5 minutes.

10) Boil the sauce ingredients all together: 2T Cooking Liquor(Mirin), 2T Soy Sauce, 5T Cane Sugar, 2T Red Pepper Powder, 3T Red Pepper Paste.

11) Toss Fried Chicken in a spicy sauce and place them on a plate. Sprinkle some toasted peanut on top. Serve it with Pickled Radish.
