Braised Beef Short Ribs(Galbijjim)

1T = 1Tbs / 1t = 1tsp / 1C = 1 Cup
For Serving Three,
For this recipe you’ll need:
2LB Beef Short Ribs, 1 Onion, 2 King Oyster Mushrooms, 1 Carrot, 150G Garlic Cloves, 8 Dried Vietnamese Red Hot Pepper, 900mL Water, 1/2t Sesame Toasted

[ For Marinade ]
1C Soy Sauce, 2/3C Sugar, 1 Onion, 6T Cooking Liquor, 1t Black Pepper Ground

Estimated Cooking Time: 100 Minutes
Cooking Points:
1) Use Cooking Liquor for tender texture.
2) Adjust Soy Sauce amount following your palate.

_Cooking Starts.
1) Chop Onion roughly into about 1.5cm sizes, and save one amount for making marinade.

2) Peel off Carrot skin, cut them into about 2cm sizes, and trim the edges nicely.

3) Slice King Oyster Mushrooms to about 0.5cm thickness.

4) Place 1C Soy Sauce, 2/3C Sugar, 1 Onion, 6T Cooking Liquor, 1t Black Pepper Ground into either blender or food processor, and mix them well. Marinade is ready to be used.

5) Get water boiled, and blanch short ribs for 10 minutes.

6) Take those meats blanched out and place them into the new pot. Add 950mL water onto them.

7) Bring it to boil, add marinade we made, and let it simmer on medium heat for 50 minutes.

8) Try to keep skimming from time to time. Now it’s cooked for 50 minutes. Put all the vegetables except mushroom.

9) Simmer it for another 25 minutes.

10) Put mushroom in, and boil for 5 minutes.

11) Time to plate them. Finish with adding toasted sesame on top.
