Coconut-y cinnamon-sugar cookies (with a bit o' dark chocolate): Vegan, gluten-free baking recipe
Are you guys ready for some cookies?! Quite a few of you have asked that I do a baking video, and one of you took it a step further, requesting a gluten-free, dairy-free recipe. Well, I rose to the challenge and came up with these coconut-y cinnamon-sugar cookies (with a bit o' dark chocolate).
Do not let the "gluten-free" or "vegan" in the title scare you away. They are delicious, my friends.
I don't frequently make baked goods without egg and flour, so I pulled from a variety of online recipes to come up with my recipe--which was the result of some experimenting to create flavor combinations that suit my tastes.
For instance, a dessert is hardly a dessert to me without chocolate, so I was delighted when my idea to throw a bit of 100% dark chocolate (no milk in it) on top of each cookie was just what the cookie needed! The perfect addition and kitchen finale.
I've got to give a hat-tip to the blog Urban Poser, which offered the basics of some gluten-free/dairy-free recipes, and which I heavily relied on in my baking experiments.
Enough pre-amble, here's the recipe:
Mix together the dry ingredients:
2 cups almond flour
1/4 tsp. baking soda
1/4 tsp. salt
In a separate bowl, mix together the wet ingredients:
1/4 cup maple syrup
1/3 cup coconut oil (melted)
1 Tbsp. vanilla extract
Some squirts of lemon
Mix the wet ingredients in with the dry ingredients. Once they've formed a dough, roll it into little balls that fit into the palm of your hand.
Toss each ball in a bowl of cinnamon and sugar (I prefer equal parts cinnamon and sugar but you can adjust this based on your preference). Flatten each ball in between your hands, and place them on a cookie sheet lined with parchment paper.
Get a bar of 100% dark chocolate and cut chunks off it. Place a chunk on the top of each cookie, then pop them into the oven at 350 degrees for 10 minutes.
And enjoy! (I particularly like them dunked in my morning coffee, just sayin'...)
Do you guys have any suggestions for a name for these cookies? I couldn't come up with anything good. Whoever offers the name I like best, I will personally bake you a batch of cookies and send them to you! (For real...I'm asking this on Facebook and here, so whoever comes up with the best title...)
