Tart with Sweet Potato Crust, Brazil Nut Pesto and Roasted Peppers // FEAST BY THREE

This dish is such a fun one because softened sweet potato chunks are worked into the pastry dough, Brazil nuts and spinach combine with basil and garlic to make a fabulous twist on pesto, and bell peppers and red onions make for a colorful top to this awesome summer tart.

The recipe is from Balance magazine (a free magazine found in some stores/yoga studios/etc around London), and I was honestly kind of amazed when I gave it a whirl and it was so stinking delicious!

I've made it a handful of times in the past month and I thought it would be a great addition to the spread, as Charlotte Hu, Supal Desai and I came together to launch #FeastByThree. (See below for links to Charlotte and Supal!)

You know how, as an adult, making new friends in a new city can be a bit challenging?! Well I feel so grateful that Connor and I have been welcomed to London by some really incredible people -- and two of the ladies who have certainly helped with my transition have been these two rockstars, Supal and Charlotte. We're all creative entrepreneurs -- though we each have a different niche -- and we've found common ground in our love of how food brings people together. How cooking together and sitting with others at a table opens the door for the best times in life, and in the joy of entertaining/hosting to create a beautiful place for that magic to happen. I'm so grateful to have found these two women in London, and I look forward to the future #FeastByThree events!
