2 TSP RICE WINE VINEGAR
2 TSP TOASTED SESAME OIL
1 TSP BLACK AND WHITE SESAME SEEDS, PLUS MORE FOR GARNISH
1/2 TSP RED PEPPER FLAKES, I LOVE KOREAN CHILLI
400G SUSHI-GRADE AHI TUNA, CUBED
2-3 SPRING ONIONS, THINLY SLICED
SALT
FOR SERVING:
COOKED BROWN SUSHI RICE, AT ROOM TEMPERATURE
PICKLED GINGER, OPTIONAL
1 RIPE BUT FIRM AVOCADO, SPRINKLED WITH YUZU, LIME OR RICE WINE VINEGAR AND SALT
5 RADISHES
20 WASABI PEAS
NORI SEAWEED
TOGARASHI SEASONING
METHOD
WHISK TOGETHER THE SOY SAUCE, VINEGAR, SESAME OIL AND SEEDS, AND RED PEPPER FLAKES IN A MEDIUM MIXING BOWL. ADD THE CUBED TUNA AND SPRING ONION, GENTLY STIR TOGETHER TO DRESS THE TUNA. MARINADE FOR 5 MINUTES.
MEANWHILE, PIT THE AVOCADO AND SLICE, DOUSE WITH YUZU, LIME OR VINEGAR.
TO SERVE, SCOOP RICE INTO BOWLS, TOP WITH TUNA POKE, HALF AN AVOCADO, SLICED RADISHES, SHEETS OF NORI, WASABI PEAS, AND A FEW PIECES OF PICKLED GINGER.
