湯水篇|鹹檸檬燒鴨湯 一鴨二食(下) (Eng Sub) - Salted Limes Roasted Duck Soup

繼上次雪菜鴨絲炆米後,
今次就會用剩餘的鴨骨和鴨架來做另一道~~~
After the Braised Vermicelli with Roasted Duck and Preserved Potherb Mustard from last time, this time I will use the remaining duck bones and duck rack to make another dish~~~

據《綱目拾遺》、《粵語》記載: “以鹽醃檸檬,歲久色黑,可治痰炎,下氣和胃。 ”
“在古書上稱為宜濛子、黎朦子,又因為「孕婦食之能安胎」,故又名益母果、宜母果。鹹檸檬的功效在中醫古籍《本草綱目拾遺》中記載:「宜母子以鹽醃,歲久色黑,可治傷寒痰火」。”
《鹹檸檬鴨湯》是一個傳統的中式湯水,起源在潮州。咸檸檬可以加入熱水飲、凍飲、煲湯、菜式上的配料。
According to the records of "Compendium Supplements" and "Cantonese", salted limes can cure phlegm inflammation, lower qi and stomach.
In ancient books, it is also called Yimengzi and Li Mengzi. It is also called Yimuguo and Yimuguo because "pregnant women can eat for peace of mind." The effect of salted lime is recorded in the ancient Chinese medicine book "Compendium of Materia Medica Supplements": "It is suitable for mother and child to pickle with salt.
Salted Lime Duck Soup is a traditional Chinese soup recipe that originated in Chaozhou. Salted lime can be soaked in hot water, cold soft drink , soup and kitchen ingredients.

鹹檸檬主要原料:檸檬,檸檬富含維生素C、鉀、鈣、鎂、磷、檸檬酸、蘋果酸等,能增強血管彈性和韌性,有營養及保健作用。

2 片 sliced - 薑 Ginger
