A WEEK OF VEGAN MEAL PREP // easy & delicious recipes 😋🍌🍪

Helloooo my beautiful friends! Today I am showing you everything I meal prepped for the week, I hope it helps you :) Lots of love xx

Almond Milk:
- 1 cup raw almonds, soaked for 15 mins in boiling water and then drained
- pinch of pink salt
- 1/4 tsp vanilla extract
- 4 pitted dates
- 750ml water
Blended on high for 5-10 mins

*STORE IN FRIDGE FOR 2-3 DAYS*

PB Cacao Smoothie:
(I freeze at least 5 bananas for the week ahead)
Smoothie Blend:
- 4 heaped tbsp cacao powder
- 2 tbsp maca powder
- 3 tbsp vanilla protein powder
- pinch of pink salt
Smoothie:
- 2-3 ice cubes
- 1 frozen banana
- almond milk (to desired consistency)
- 2 tbsp smoothie blend
- 1 tbsp peanut butter

Banana Bread:
*PREHEAT OVEN TO 180 DEGREES CELCIUS*
*GREASE/LINE A BANANA BREAD TIN*
In a large bowl, first combine:
- 3 mashed bananas
- 4 tbsp maple syrup
- 1 flax egg (1 tbsp flaxmeal mixed with 3 tbsp water)
- 1 tsp vanilla extract
Then, add:
- 1 cup buckwheat flour
- 1 cup rice flour
- 2 tsp baking soda
- pinch of salt
- 3/4 cup soy milk
Mix well and add:
- 1 cup walnuts, crumbled
*POUR INTO BAKING TIN, TOP WITH WALNUTS + PINK SALT (as desired)*
Bake for 60-70 mins at 180 degrees celcius or until a knife comes out clean
*STORE IN AIRTIGHT CONTAINER FOR 3-5 DAYS*

Herby Cashew Sauce:
- 1 cup cashews, soaked in boiling water for 15 mins and drained
- 5 parsley leaves
- 5 coriander leaves
- 2-3 dill leaves
- 1 tbsp(ish) chives
- pinch salt
- pinch pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp nutritional yeast
- juice of 1 lemon
- 3/4 cup water
Blend, store in air-tight jar in the fridge for 3-5 days

Sweet potatoes:
*PREHEAT OVEN TO 180 DEGREES CELCIUS*
- 2 sweet potatoes, chopped into small-medium pieces and then coated in:
- 1 tbsp olive oil
- pinch of pepper
- pinch of pink salt
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
*BAKED FOR 30-40 MINUTES or until cooked through*

Cookies:
*PREHEAT OVEN TO 180 DEGREES CELCIUS*
In a large bowl, first combine:
- 3/4 cup almond butter
- 1/3 cup maple syrup
- 1 flax egg (1 tbsp flaxmeal + 3 tbsp water)
- 1/3 cup coconut sugar
- 1 tsp vanilla extract
Then, add:
- 2/3 cup buckwheat flour
- 2/3 cup rice flour
- 1 tsp baking soda
- pinch of pink salt
- 1/3 cup cacao powder
And mix well
Roll into desired cookie sizes, place on baking tray and bake for 11-13 minutes.
Allow to cool before eating, store in an air-tight container for 4-6 days

Tahini dressing:
- 1/2 cup tahini
- juice of 1 lemon
- 1 tbsp maple syrup
- pinch of pink salt
- 1/2 cup water (add slowly to ensure correct consistency)
Mix well, store in jar in the fridge for 4-6 days

Pumpkin and cauliflower soup:
- 2 cups roasted pumpkin
- 1 cup boiled cauliflower
- 400ml coconut cream
- 1 tsp pink salt
- 1/2 tsp pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tbsp veggie stock
- 1 tsp smoked paprika
- 1 tsp cumin
BLEND, store in fridge for 1-3 days or in freezer for 4 + days
PLEASE NOTE: I cooked extra pumpkin + cauli to make 2-3 batches of soup

Crispy chickpeas:
*PREHEAT OVEN TO 180 DEGREES CELCIUS*
- 1 can chickpeas, drained and rinsed
- 1 tsp olive oil
- pinch of salt
- pinch of pepper
Roasted in oven for 10-15 minutes, stored in air-tight container in freezer for 4-6 days
