what i eat in a day (vegan) | diet change + farmers market vlog
hey my beautiful friends!! it was so good to vlog today after having a bit of a break from doing so - i hope you enjoy and please see the recipes below :)
pesto scramble:
- 1/2 can chickpeas
- 1 tbsp oil
herby sauce:
- 4 leaves basil
- 6 leaves parsley
- 1 tsp dill
- 1/2 cup cashews
- juice of 1 lime
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
rice paper bacon:
- 4 sheets rice paper
- 1/4 cup bbq sauce
- 1/8 cup olive oil
- 1 tsp liquid smoke
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
baked @ 180 celcius for 10-15 mins
passionfruit slice base:
- 20 small dates, soaked and drained
- 1 cup almond meal
- 1 tsp vanilla
- 1 tbsp coconut oil
passionfruit slice filling:
- 400ml coconut cream
- 1 cup cashews (soaked in coco cream)
- 2/3 cup passionfruit pulp (approx 6 passionfruit)
- 4 dates
- pinch of salt
warm kale quinoa salad:
- 1/2 cup quinoa cooked in 1 cup water
- 5 stems of kale, chopped
- 1 cup sundried tomatoes (approx 10-12)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp olive oil
crispy chickpeas:
- 1 can chickpeas
- 1 tsp olive oil
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
baked @ 180 degrees celcius for 20 mins
