CHOC-CHIP BUCKWHEAT PANCAKES:
(Makes 4 pancakes)
Blend or mix:
- 1 cup buckwheat flour
- 1/4 tsp baking soda
- pinch of pink salt
- 1/2 cup Cocobella coconut yoghurt
- 1/4 cup plant-based milk
- 1 mashed banana
- 1/2 tsp vanilla extract
- 1/4 cup vegan choc-chips (add at end if blending)
Cook over medium heat in a fry pan with a little oil or vegan butter
Serve with fresh banana + maple syrup
NACHOS:
Fresh salsa:
- 1/3 cup corn kernels
- 12 cherry tomatoes, sliced
- 1 sprig spring onion, sliced
- 1 clove garlic, minced
- juice of 1 lime
- 6 coriander leaves, chopped finely
Guacamole:
- 1/2 an avocado
- juice of 1/2 a lemon
- pinch of salt
- pinch of pepper
Beans:
- 1 can red kidney beans, rinsed
- 1 tbsp oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp smoked paprika
- pinch of salt
- pinch of pepper
Heat for 5 mins on high over the stove
PUMPKIN & CANNELINI BEAN CURRY:
In a pot, fry:
- 1/4 cup spring onion, chopped finely
- 3 cloves garlic, chopped finely
in 1 tbsp olive oil for 5 mins
Then, add:
- 1 can coconut cream
- 2 tsp maple syrup
- the juice of 1 lime
- 1 tsp curry powder
- pinch of salt
- pinch of pepper
- 10 coriander leaves
- 1 can cannelini beans
- 1/4 pumpkin, chopped into cubes
for 30-40 minutes on low-medium heat
Serve with rice, coconut yoghurt, coriander and lime

I eat a vegan diet which is also predominantly gluten-free, however I do occasionally eat gluten and therefore include it in recipes on my YouTube channel
