奶油泡芙(抹茶奶油馅)|不回缩不塌陷|萨姐的南腔北调

奶油泡芙 - 做泡芙最常见的问题就是一出炉塌陷,或者根本膨胀不起来,其实只要掌握几个细节就能轻易做出成功的泡芙。泡芙的形状有很多,今天我们做最基础的圆形小泡芙。 小小的泡芙,夹着清甜不腻的抹茶奶油内馅,一口一个,停都停不下来。

原料
无盐黄油 60克
水120克
细砂糖 5克
盐 2克
高筋面粉 70克
鸡蛋液 120±克 (根据面糊厚薄情况)

抹茶奶油馅
抹茶粉 5克
凉水 10克
奶油 300克
糖粉 20克

**预热烤箱至200C/390F
**200C/390F烤制22分钟
**调至220C/430F度烤制4分钟

Today I am going to share how to make cream puffs. The most common problem in making choux pastry is that they collapse when they are out of the oven, or they cannot rise at all. It is actually very simple to make choux pastry, as long as you grab a few details. There are many different shapes of puffs. Today we make the most basic round puffs/profiteroles. The little puffs are filled with creamy matcha cream filling, one bite at a time, you just can't stop.

INGREDIENTS
Unsalted butter 60g
Water 120g
Caster sugar 5g
Salt 2g
Bakers flour 70g
Egg 120±g

Matcha cream filling
Matcha powder 5g
Water 10g
Thickened Cream 300g
Icing sugar 20g

**Preheat the oven to 200C/390F
**Bake at 200C/390F for 22 mins
**Change to 220C/430F and bake for 4 mins
