1 cup sago pearls ( powdered )
1/4 cup mango juice (or water)
2 tablespoons sugar
Extra sago starch (for dusting)
Instructions:

Start by peeling and slicing the ripe mango. Place the mango slices in a blender or food processor with sugar and water and blend until you achieve a smooth puree. Set aside.
Step 2: Make the Boba Dough
In a mixing bowl, combine the sago powder and gradually add the mango puree and mango juice (or water) into the bowl. Mix everything together using a spoon or your hands until it forms a sticky dough. If the dough is too wet, add a little more tapioca starch. If it's too dry, add a small amount of mango juice or water.
Step 3: Shape the Boba Pearls
Dust a clean surface with tapioca starch to prevent sticking. Take a small portion of the dough and roll it into a long, thin rope, around 1/4 inch in diameter.
