Beefless Jerky

Dry ingredients:
3 cups of vital wheat gluten
1/2 cup nutritional yeast
1 tablespoon vegan bouillon
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon shiitake powder
1 tablespoon cocoa powder
1 tablespoon instant coffee
2 tablespoons beet root powder
Combine all dry ingredients together.
Wet Ingredients:
1 15.25 oz can of kidney beans (including liquid)
1 tablespoon sesame seed oil
1 tablespoon liquid smoke
2 tablespoons agave syrup (not included in the video, but highly recommended)
2 tablespoons vegan Worcestershire sauce
2 tablespoons red cooking wine
3 tablespoon liquid aminos
1.5 cups of warm/hot water
Blend all ingredients together (except the hot water) until smooth.

1. Mix dry and wet ingredients together to make a dough.
2. Knead dough for 5 minutes
3. Rest for 1 hour
4. Cut into 5 even pieces
5. Knot
6. Cook in slow cooker/steamer for 2 to 2.5 hours
7. Shred
8. Marinate in jerky seasoning for at least 1 hour (ingredients listed below)
9. Place seitan on oven pan, I used parchment paper.
10. Bake at lowest temperature in oven (about 170 degrees) for 2.5 hours
11. Enjoy!
Jerky marinade

1 cup of soy sauce
1 cup agave syrup
3 tbsp vegan Worcestershire sauce
1 tbsp garlic powder
1 tbsp onion powder
1/2 to 1 tbsp smoked paprika & hot chili
(Trader Joe’s) this is very spicy, start with 1/4 tbsp and add as needed. Taste as you go.
1 tbsp black pepper
