Tofu Scramble Soyrizo & Vegetable Vegan Breakfast Burritos | Easy Vegan Burrito Recipe

Hi friends! Here’s an easy tofu scramble, soyrizo, & veggie vegan breakfast burrito for you.

These can be made in about 30 minutes!

Yields 5 Servings

You’ll need 12 inch flour tortillas

Ingredients for Tofu Scrambled & Potatoes:

1 Tbsp vegetable oil of your choice
1/4 onion (diced)
2 large potatoes (peeled & diced)
1 12oz block of extra firm tofu (drained)
1/2 Tsp black salt
1/2 Tsp turmeric
Ingredients for Soyrizo & Veggies:

12 oz. Soyrizo ( I use Reynaldo’s, Trader Joe’s, or El Burrito brand)
1/2 onion (diced)
1 small red bell peppers (diced)
1 jalapeño (diced)
6 mushrooms (sliced)
Salsa Recipe:

2-3 jalapeño
1/4 onion
2-3 garlic cloves
2 tomatoes
4 tomatillos

1.) Cut the jalapeños, tomatoes, and tomatillos in half.
2.) Roast the veggies on a skillet or nonstick pan with a little oil until fully cooked. I add a few Tbsps of water to speed up the cooking time.
3.) Add the cooked veggies to the blender and pulse until you get the desired consistency.
4.) salt to taste.
