Vegan Chickn Parmesan | Washed Flour Method | WTF | Seitan | Vegan Chicken Patties
Hello friends! Here’s one of my latest creations that I’m happy to share with you all. This recipe is very versatile and can be used in many dishes. I’ve personally made chick’n sandwiches and chick’n Parmesan with these patties... I hope you enjoy it and if you recreate it, please feel free to tag me at @yessies_plantbaseddiet_
Vegan Chickn Parmesan
Yields 8 servings
Dough Ingredients:
5 lbs bag of flour (must contain at least 10% protein)
About 6 cups of water
1.) Divide the flour in half into two mixing bowls (approximately 6 cups of flour into each bowl)
2.) start with 2.5 cups of water in each bowl to create a dough ball. Add more water as needed, adding 1/4 cup at a time.
3.) Knead the dough for 5-7 minutes until it no longer sticks to your fingers.
4.) cover the dough balls and rest for at least 40 minutes.
5.) move on to the washing stage. Refer to the video below for step-by-step instructions on how to wash the dough properly.

Seitan Seasoning Paste:
2 cubes of Not-Chicken bouillon
4 Tbsp nutritional yeast
4 Tbsp liquid aminos
4 tbsp olive oil
2 tsp onion powder
3 tsp garlic powder
2 tsp poultry seasoning
1 tbsp agave syrup
1.) blend until smooth to create a paste
Simmer Broth:
1 cup of apple juice & about 1.5 Tbsp of McCormick Garlic Herb Black Pepper Sea Salt seasoning blend. Adjust seasonings and water as needed.
Breading ingredients for frying the seitan patties:
Wet mix
1/2 cup of flour
1 Tbsp ground flaxseed
2 Tbsp corn starch
1 cup water
1 cube not-chicken bouillon
Mix well to create a batter.
Dry Mix
1 cup flour
1/2 tsp celery salt
1/2 tsp white pepper
1 tsp Italian seasoning blend
2 tbsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp poultry seasoning
1/2 tbsp salt
1 tbsp umami mushroom powder
