真正純素無添加,不加一滴水,內餡還可作鳳梨果醬!

.鳳梨醬.

要點:
①鳳梨不要切而用刨絲器以保留其纖維及絮狀感,
小火熬煮,煮至果汁收乾熬出黏膠感。
②煮果醬濃稠即可,做鳳梨酥餡料要繼續翻炒至收乾水份。

成品要求:
鳳梨醬呈金黃近琥珀色,透亮,口感酸甜,帶絲、茸的感覺。

材料:
鳳梨 兩個約 4 公斤
去皮、去眼、去芯 剩 3 公斤
成品 600 克

.鳳梨酥.

要點:
酥皮和餡料的比例差不多,酥皮稍多一點。
不要讓果醬流出來。

成品要求:
形狀方正,顏色金黃,酸甜可口。
剛出爐香脆可口,第二天口感香酥。

材料:
鳳梨酥餡 360克、麵粉 300克、素油 (花生 / 大豆 / 橄欖油等) 70克
黃薑粉 2克、鹽 3克 (加麵粉裡)、
冰糖水 3至5克 (可以砂糖 / 紅糖 / 甜菊糖取代)
椰漿 半盒(100克)

【English Recipe】

Homemade Taiwanese pineapple cakes.natural pineapple jam *Vegan version* No egg, milk, butter added

No artificial fragrances and preservatives!
You can just make the jam filling as an natural pineapple jam, enjoy 'em with bread or pancakes etc.

A must-see dessert recipe for vegans♬ ♪

-Pineapple jam

Key points:
Do not cut pineapple but use a grater to retain its fiber.
Simmer over low heat until the juice is dried and boiled to give a sticky feeling.
Boil it till thick, the pineapple jam is finished.
*You are free to make it as sweet as you want, and control the texture of the jam too.

If you wanna make fillings of pineapple cake, boil it until it is almost dry.
*Stir occasionally to check and avoid overcooking
Goal:
Pineapple jam is golden brown, bright as amber in color.
Taste sweet and sour.
Ingredients:
Two pineapples weigh about 4 kg.

(After removing the skin, eyes and core: 3kg left.
Finished product of jam: 600g)

- Taiwanese pineapple cakes

Key points:
The ratio of pastry to filling is about the same, pastry is a little bit more.
Don't let the jam run out.

Goal:
Square shape, golden color, sweet and sour.
When cakes come out of the oven, the texture of its pastry should be crispy.
Turn into a crumbly texture the next day.

Ingredients:
360g pineapple cake jam filling, 300g flour,
70g vegetable oil (peanut/soybean/olive oil ,etc.)
2g turmeric, 3g salt (put in flour),
3-5 g rock sugar water (can be replaced by sugar/ brown sugar/ stevia)
Half box of coconut cream [*NOT coconut milk!] (100g)
