蘿蔔糕,是在香港最受歡迎的年節糕點之一。
港式蘿蔔糕以饀料豐富而聞名,除了清甜的白蘿蔔,還有香氣誘人的臘味、香菇。
在香港,一年365天也很容易在餅店或去飲茶的時候買到、吃到口味不一的蘿蔔糕,
為甚麼陳奶奶還要自己做蘿蔔糕呢?
因為自製能選用更好的食材、也能做更健康輕怡的版本,可以吃得更安心!
陳奶奶這次跟大家分享傳統蘿蔔糕的健康版本,
少鹽少油,但用料實在,Q彈惹味,還吃得到一條條的蘿蔔絲喔!

材料:
白蘿蔔 1800克
粘米粉 (在來米粉) 200克
鷹粟粉 (玉米澱粉) 100克
乾瑤柱 (干貝) 50克
自製廣式臘肉 (可以市售臘肉取代,儘量選用瘦肉部份) 50克
臘腸 3根
櫻花蝦 10克
香菇 7顆
油蔥酥 20克

自製雞粉 (可以市售雞粉取代) 8克 (1大湯匙)
白胡椒粉 2克

【English Recipe】
The Hong Kong-style turnip cake is the most popular dim sum item and a festive dish for Chinese holidays in Hong Kong, including Chinese New Year. It is a savory rice cake famous for its rich filling, loaded with cured meat, daikon radish, mushrooms, and dried shrimp. It's steamed and then pan-fried to create a tender texture with a crispy crust.
In Hong Kong, it is easy to buy and eat turnip cakes in different versions at bakeries or go-to restaurant for dim sum 365 days a year.
So, why does Grandma Chen make her own turnip cake?
Because she can choose better ingredients and make a healthier and lighter version so that she can eat at ease!
This time, Grandma Chan is pleased to share with you a healthier version of the traditional turnip cake.
With less salt and oil, made with real ingredients and you can still eat the texture of shredded radish!

Ingredients:
Daikon radish (White radish) 1800g
Rice flour 200g
Corn starch 100g
Dried scallop 50g
Home-made Cantonese cured meat (Can be substituted with cured meat from the market, use lean meat if possible) 50g
Chinese sausage 3 pieces
Dried sergestid shrimp 10g
Shiitake mushrooms 7 pieces
Fried shallots 20g

Home-made chicken powder (Can be substituted with chicken powder from the market) 8g, approx. 1 tbsp
White pepper 2g
Salt quantum sufficit (3g used in the video)
