今天来做一款焦糖蛋糕,用了清淡的乳酪戚风蛋糕做底,和焦糖奶油结合,一点都不会觉得甜,加上香脆的Lotus焦糖饼干,味道非常独特。

0:14 6寸轻乳酪戚风蛋糕
3:55 焦糖酱制作
5:27 蛋糕抹面和装饰

🍞原料
☘️乳酪戚风蛋糕
鸡蛋3个(55克/个,连壳)
植物油 40克
低筋面粉 45克
奶油奶酪 60克
温牛奶 40克
细砂糖糖 50克
柠檬汁 少量

☘️焦糖酱制作
细砂糖 60克
水25克
加热好的烫奶油 130克
盐 1克

☘️把以上制作好的焦糖酱分成2部分
取出40克焦糖酱制作焦糖淋面
吉利丁粉1克
水4克

☘️余下的焦糖酱制作焦糖奶油
奶油 300克

☘️** 预热烤箱145C/295F
** 145C/295F烤50分钟
** 调高至160C/320F烤8-10分钟

This caramel cake uses a fluffy and soft cheese chiffon cake as the base, filled with caramel cream and decorated with crispy Lotus Biscoff, it tastes really unique and delicious.

🍞INGREDIENTS
☘️ Cream Cheese Chiffon Cake
3 eggs (55g each with shell)
Vegetable oil 40g
Cake flour 45g
Cream cheese 60g
Warm milk 40g
Caster sugar 50g
Lemon juice

☘️Caramel sauce
Caster sugar 60g
Water 25g
Hot cream 130g
Salt 1g

☘️Divide the above caramel sauce into 2 portions
Take out 40g of caramel sauce to make the dripping
Gelatine powder 1g
Water 4g

☘️The remaining caramel sauce to make caramel cream
Thickened cream 300g

☘️** Preheat oven to 145C/295F
** Bake at 145C/295F for 50 mins
** Adjust to 160C/320F for 8-10 mins
