Louisiana Roasted Corn Grits from Bhebeb

Mr. Bucky and I both love these grits. Thanks to Bhebeb for sharing the recipe.

Hi Phyllis, I wanted to share with you one of my favorite recipes from my home, Louisiana. It is extremely economical and oh so good! It was the first thing to go when I served it at a gathering. These are my Louisiana Roasted Corn Grits:
1 cup Yellow corn grits (not white)
2 cups yellow corn kernels (fresh or frozen)
Chicken Stock (according to amount called for on grits package)
3 green onions
1 8 ounce block of full-fat cream cheese
1 half stick of butter
Salt and Pepper

Roast the corn kernels in a saute' pan until brown, stir constantly or they will burn. Transfer roasted kernels to a bowl
Melt butter in saute pan, chop green onions and saute until soft. Set aside.
Prepare yellow corn grits according to package directions. Once they thicken, turn heat on lowest setting and stir in the block of cream cheese in small pieces. Add roasted corn kernels and the green onions along with the butter.
Stir until everything is combined, and of course, salt and pepper to your taste. (sometimes I add a little honey for some sweetness)

This also freezes very well and can serve a crowd! I do hope you give it a try! Thank you for all of your videos and recipes :)

1/2 cup quick grits (white or yellow)
2 cups chicken broth
1 cup yellow corn fresh or frozen
2 green onions, chopped
4 ounces cream cheese
Salt and Pepper to taste ·
