Abgoosht (Dizi) recipe

📌ingredients:
- 2-3 potatoes
- 1 onion
- 2-3 tomatoes
- 4 cloves of garlic
- 250g lamb meat with extra fat
- 0.5 cup of whole yellow peas
- 2 dried limes
- 0.5 cup of navy beans
- water
- 2 tbsp tomato paste
- 2 tsp black pepper
- 1 tsp turmeric
- 3 tsp salt
- 1 tsp + 1 tbsp cinnamon powder
- 1 tsp cumin
- 1 cinnamon stick
📌preparation:
- first of all, soak the beans and whole yellow peas with 2 cups of water and let that rest for at least 24 hours.
👀by doing this, they will be cooked sooner and better!
- peel the onion and chop it.
- peel the tomatoes and chop them.
- smash the garlic.
- prepare a pot and add the lamb meat and fat, drained navy beans and whole yellow peas, chopped onion, smashed garlic, chopped tomatoes, and 6 cups of water to that.
👀 the best kinds of pot for cooking Abgoosht is a cast iron pot or brass pot. your Abgoosht will be cooked and tasted incredible when you use these kinds of pots for cooking!
- boil till it bubbles.
- remove the foam of the meat.
👀you can skip this part but my own experience tells me that it is better to remove the foam because it will change the color of your Abgoosht to dark brown instead of exciting red!
- after removing the foam, let them all cook together for 4 hours on low heat.
- peel the potatoes.
- chop them.
- in a bowl, add 2 tbsp tomato paste, 2 tsp black pepper, 1 tsp turmeric, 3 tsp salt, and 1 cup of water.
- mix them well.
- mix them well.
- when the 4 hours of cooking it's over, add the chopped potatoes, the paste, dried limes, and 1 cinnamon stick to your Abgoosht.
- let that cook for 2.5 hours on low heat.
- that's it!
📌How to serve:
- when the cooking it's over, remove the dried limes and cinnamon stick.
- separate some fat.
- mix the fat with 1 tbsp cinnamon powder.
👀 The taste of this mixture it's fantastic. You can add it to your Abgoosht or serve it alone just like I did.
- separate the Abgoosht juice and mix that with bread and enjoy.
- remove the bones out of Abgoosht and separate the rest of the Abgoosht juice.
-mash the other cooked ingredients well and enjoy.
