Refrigerate the mooncake before serving. Must be kept cold. Snow Skin Mooncake is eaten during the traditional Chinese Mid Autumn Festival. The Snow Skin Mooncake has become so popular over the decades. The skin is so light, delicate and tender and wrapped with sweet mung bean fillings.

Snow Skin Mooncake 冰皮月饼

Ingredients :
TO MAKE MUNG BEAN PASTE :
100g mung beans
3 tbsp sugar
150-200ml water
Corn oil

TO MAKE DOUGH (SKIN)
70g glutinous rice flour
30g rice flour
2 tbsp sugar
2 tbsp corn oil
2 tbsp condensed milk
140ml cold milk

Coating :
3 tbsp cooked glutinous rice flour

Steam in high heat for about 30 minutes.
Tips: Refrigerate the mooncake for a few hours before serving (To be kept cold).
