KAYA JAM (EGG, COCONUT & PANDAN)
Kaya coconut jam is a popular breadfast for most Singaporean as well as in Malaysia. It normally served with a piece of soft cold butter in between the toast. The kaya has a thick smooth and glossy texture which is made up of egg yolks coconut and pandan. It brings out a strong aroma of the three ingredients (egg yolk, coconut and pandan). Making your own kaya not only you can control the sugar, you can be proud of your homemade kaya.
Ingredients
4 egg yolks
50g fine sugar
50g palm sugar
220ml coconut milk
5 pandan leaves
Pour the kaya in a double boiler on medium heat so that the kaya will not burn. Stir occasionally or every 5 to 8 minutes each time till thick and glossy. This recipe here is only for a small jar of kaya. Should you want to have a bigger jar of kaya, I suggest you double the portion of the ingredients.
