How To Make Authentic TAIWANESE BEEF NOODLE SOUP at home - 紅燒牛肉麵 | Wholesome & Super Flavorful 🍜

Let me show you how I make the most delicious Taiwanese Beef Noodle Soup from scratch. This recipe does require some time to make -mainly down time (braising)- but it's 100% worth it. The broth is super fragrant and full of flavor due to all the herbs and spices we use. The beef is tender and juicy and the carrots are sweet and savory at the same time. This classic dish is ideal to counter the cold, winter days because it's so wholesome and heartwarming, but honestly we are having this dish all year round because it's so good 😆

INGREDIENTS (for 6 servings):

Beef Noodle Soup:
• 1 kg (2.2 lb) beef shank (and/or beef finger meat)
• 10 slices ginger
• 8 pods star anise
• 8 garlic cloves
• 2 bird’s eye chili peppers/Thai chili peppers
• 1 large onion sliced
• 1 piece rock sugar (or 1 Tbsp brown sugar)
• 1 tsp Sichuan pepper corns
• 4 Tbsp (spicy) bean paste (doubanjiang)
• 80 ml dark soy sauce
• 80 ml light soy sauce
• 80 ml rice wine
• 1 big (or 2 medium) fleshy tomatoes
• 2-3 chunky carrots (Asian variant) roughly chopped
• 3 bay leaves
• Salt & white pepper to taste
• Peanut oil/cooking oil
• Flour noodle

Garnish/toppings:
• Pickled mustard greens thinly chopped (1 package)
• 2 garlic cloves, a drizzle of Chinese black vinegar, soy sauce and sesame oil
• Bok choy (jr) (1 to 2 p.p.)
• Scallions sliced (1 stalk)
• Cilantro chopped (a handful)
• Thai chili peppers diced (optional)
