高筋面粉200g
(或普通面粉)
冷水110g
糖5g
盐3g
干酵母2g
煮贝果糖水:
水1000ml
细砂糖 50g(可不放)
夹馅:奶油奶酪、干果适量
1.奶油奶酪切块备用。
2.主锅里加入水和面粉,揉面1分钟,冷藏静置半小时。
3.面团里加入糖、盐和酵母,揉面5分钟。
4.揉完面分割5份,整形发酵 至1.5倍或大约30分钟。不要发得太大,不然口感太软不扎实。
5.烤箱预热 230度C。
6.糖水煮开,关小火,贝果每面烫20秒,马上放入烤箱,
230度烤18分钟。
7. 烤好的贝果从烤箱取出,马上放在温度比较低的地方,你会听见僻噼啪啪爆裂的声音,一会儿你的贝果就都出现钻石纹啦!
出钻石纹的重点:
1.面团水量要小(50-55%)按配方来,不要多加水。
2.烤温要高(220-230C)把表面烤干。
For dough:
200g high protein flour
(or plain flour)
cold water 110g
sugar 5g
salt 3g
dry yeast 2g
For boiling bagel:
Water 1000ml
50g caster sugar (optional)
Filling: cream cheese, dried fruits
1. Cut the cream cheese into cubes.
2. Add water and flour to TM bowl, knead for 1 minute, refrigerate for half an hour.
3. Add sugar, salt and yeast to the dough and knead for 5 minutes.
4. Divide the dough into 5 portions after kneading, shape and ferment to 1.5 times or about 30 minutes.
5. Preheat the oven to 230°C.
6. Boil the sugar water, turn to low heat, blanch the bagels for 20 seconds on each side, put them in the oven immediately.
Bake at 230 degrees for 18 minutes.
7. Immediately after baking, take it out and place it at a cold and windy place. The greater the temperature difference between the cold and the hot, the easier it is to crack to diamond pattern.
How to achieve the diamond pattern:
1. The amount of water in the dough should be small (50-55%) according to the recipe, do not add more water.
2. The baking temperature should be high (220-230C) to dry up the surface.
