Vegan Stir Fried Green Beans - Szechuan Style
In this video I will show you how to make vegan stir fried green beans. This recipe for Szechuan green beans is delicious and easy to make. I will show you the technique of how to dry fry green beans to create the best texture and flavor for this dish. It is a vegan recipe that makes use of the crumbs at the bottom of the soy curls bag to make a plant-based pork like texture. Enjoy this recipe. In the video I did not use szechuan peppercorn, but you can add it for a more authentic Sichuan flavor with the mala numbing spice.
Ingredients:
I lb green beans
2 tbsp ginger
2 tbsp garlic
1/2 medium onion - sliced
6 dried red chilis
I cup Soy Curl crumbles from bottom of bag
1 tbsp soy sauce and water
1 tsp Szechuan peppercorn - optional
Sauce
2 tbsp soy
1 tbsp rice wine
1 tbsp Chinese vinegar.
I tbsp hoisin
I tbsp fermented bean chili oil
Finely chop ginger and garlic. Cut onion into slices. Wash and cut green beans into desired size - we are halving them in this recipe. To a cup of soy curl crumbles add 1 tbsp of soy sauce and cover with water. Let soak for at least 15 minutes then drain and squeeze out excess water. To prepare the sauce, mix 2 tbsp soy sauce, 1 Chinese cooking wine, 1 tbsp chinese black vinegar, 1 tbsp hoisin and 1 tbsp of fermented black chili. Set aside.
Place wok on medium-low flame and add 1-2 tbsp oil. Add beans and slowly fry them for 8-10 minutes until beginning to char. You want to do this slowly and get little crisp bits on the skin. If the wok is too hot turn it down. Do NOT add water to steam the beans at this point because you want them to be dry fried for the best texture.
Place wok on a medium-high flame and add 1-2 tbsp oil. If using sechuan peppercorn, add to oil and toast for a minute. You can remove them with a slotted spoon once the oil is flavored. Add in garlic and ginger and stir. Add in red chilies and fry for a minute. Add onions and cook for 1-2 minutes until starting to soften. Add in your soy curls and cook for 3-4 minutes until starting to brown. You can add a little more oil at each step if needed. Once the soy is heated through add your beans back to the wok followed by the sauce. Toss for about one minute and then transfer to a bowl. Enjoy with a bowl of white rice.
