Hoppin John Congee Style (quick leftover congee) #shorts

I use leftovers to make a quick and easy Hoppin' John Congee. Have leftover black eyed peas? Use them up like this! I make a congee like porridge often using leftover rice and some water or broth. I will add whatever vegetable or leftovers I have on hand. This one was made in just minutes using some of my leftover Black Eyed Peas (actually, pink eye purple hull peas) that I made for New Year's Day. Enjoy!
