Vegan Irish Stew Recipe | Irish Stew with dark Irish Stout

In this video I will show you my vegan Irish stew recipe. This stew is perfect for St. Patrick's Day but I think it should be enjoyed all year long. It packs in flavors from caramelized onions, carrots, and celery. It uses mushrooms and soy curls for meatiness. I show you how I develop layers of umami flavors in this stew. The dark Irish Stout broth provides a hearty earthy foundation for the soup. I encourage you to patronize your local businesses and seek out a local brewpub that is making great Irish style stout. Ingredients:

1 medium onion
3 large carrots
6 stalks of celery
3 medium red potatoes
2 cups mushrooms, quartered
1 cup Soy Curls - dry (affiliate link) https://amzn.to/2RlTI2w
3 cloves garlic
1/4 cup all purpose flour
2 tbsp tomato paste
1 tbsp Maggi seasoning (substitute soy or miso)
1 tsp dried thyme
1 large bay leaf
1/2 tsp black pepper
4 cups vegetable broth
1 pint dark Irish stout - buy local if you can
Salt and pepper to taste

Chop all of the vegetables to the size you prefer. In a large soup pot or dutch oven over medium heat, add a tbsp of oil, the onions and a pinch of salt. Sauté the onions slowly until they start to brown and caramelize. Take your time here and let the sweet flavors of caramelized onions develop. Add in your carrots, celery, mushroom and garlic. Cook for a few minutes until they begin to soften and release their juices. Add tomato paste and fry for 1-2 minutes in the pan. Add the flour and cook for 1-2 minutes. Add in your Irish stout and stir well. Cook for 2-3 minutes to evaporate the alcohol. Add in vegetable stock, potatoes, soy curls (add them dry) and Maggi seasoning. Finally, add the thyme, bay leaf and black pepper. Cover and simmer for 20 minutes until it is the thickness you desire. Serve with Irish Soda Bread.
