How to make vegan EMPANADAS (Korean Style)
In this video I will show you how to make vegan empanadas from start to finish. If you are looking for an easy and tasty appetizer that will wow your guests, this is it. This empanada was inspired by Korean flavors and is stuffed with a spicy meaty vegan filling made from soy curls with Asian flavors. Well-fermented kimchi is the key to making these empanadas absolutely delicious. I also show you how to make a light and tasty empanada dough. Empanadas are one of my favorite finger foods for parties and they can be served hot or room temperature.
The Dough
2 cups All Purpose Flour
1/2 tsp salt
8 T cold plant-based butter
2/3 cups ice water
The Filling
1 cup soy curl crumbs (https://amzn.to/2RlTI2w)
1 cup water
1 T soy sauce
1 T Maggi seasoning
4 cloves garlic
2 T chopped ginger
1/2 yellow onion
1 med potato
1 cup well-fermented kimchi
1/4 cup kimchi juice
