바닐라 금귤 콩포트 : Vanilla Kumquat Compote | Honeykki 꿀키

오늘의 메뉴는 금귤 바닐라 콩포트입니다.
사실, 이렇게 간단한 레시피는 따로 올리진 않는데..
제가 너무 빠져있는 콩포트라서 앞으로 영상에 종종 나올거 같아 이렇게 영상을 올립니다.

전처리 과정이 좀 귀찮긴 하지만, 다른 과일로 만든 콩포트나 잼보다 활용할 수 있는 방법이 많아서 좋더라고요.
보통 3~4월쯤에 쉽게 구하실 수 있으니, 지금 만들어 두었다가 여름까지 딱 먹으면 좋을 것 같아요.

Let’s make Kumquat vanilla compote today.
I don’t usually make a separate video for such a simple recipe…
but I am so obsessed with this right now, you will see it a lot in the upcoming videos.
The preparation is a whole lot of work, but this is the more versatile than any other fruit compote or jam.
You can get kumquats pretty easily around March and April, so make them now and enjoy them up to summer.
 
* 재료 Ingredients
깨끗히 씻은 금귤, 설탕 (금귤의 30~50%정도), 바닐라빈, 레몬즙 1/2개 분량
Thoroughly cleaned kumquats, sugar (30~50% of the kumquats in volume), vanilla beans, juice of half a lemon
 
*과정 Method
1. 금귤은 베이킹소다 뿌려 꼼꼼하게 닦은 후, 물에 깨끗히 씻어줍니다.
1. Thoroughly scrub the kumquats with baking soda and rinse well with water.
 
2. 이쑤시개나 포크, 또는 손가락을 이용해 꼭지를 제거해줍니다.
2. Remove the tip with a toothpick, fork, or fingers.

3. 반을 가른 후, 씨앗을 제거해줍니다.
3. Halve the kumquats and remove seeds.
 
4. 큰 그릇에 금귤을 담고, 설탕과 바닐라빈을 넣어 잘 섞어줍니다.
4. Place the kumquats in a large bowl and mix in sugar and vanilla beans.
 
저는 금귤 1.5kg, 설탕 500g, 바닐라빈 2개를 사용했어요.
I used 1.5kg kumquats, 500g sugar and 2 stalks of vanilla bean.
 
5. 금귤에서 수분이 나와 설탕이 녹을 때까지 기다려주세요.
5. Wait until the moisture from the kumquats melt the sugar.
 
금귤은 수분이 많은 과일이 아니라서, 중간중간 섞어줘야 설탕이 빨리 녹아요.
Kumquats don’t retain much moisture, so toss the mixture a few times to speed up the process.
 
6. 중불에서 10분, 그리고 약불에서 30분정도 끓여줍니다.
6. Boil for 10 mins on medium heat and simmer on low for 30 mins.
 
7. 열탕소독한 유리병에 담아 보관해줍니다.
7. Store in sterilized glass jars.
