How to make Saba Shoyu Ramen 鯖節醬油ラーメン

Hello! In this video, I created a recipe for Saba Shoyu Ramen (鯖節醬油ラーメン). Compared to Niboshi, Saba is not as commonly used in ramen. Saba actually gave great dimension to the clear tonkotsu soup base and complements shoyu tare with good balance of taste and umami.

The noodles are handmade using a mix of flour and whole-wheat flour which were fragrant and chewy in texture. I used Japanese flour and the noodles are really tasty. Simple toppings were chosen so that the focus stays on the noodles and ramen soup.
