Sanzoku-Yaki! Crispy Twice Fried Chicken from Nagano

Sanzoku-yaki, literally “mountain pirate” fried chicken, is a crispy twice fried chicken famous in the Matsumoto/Shiojiri area of Nagano prefecture. It’s a chicken thigh that is marinated and fried whole. It has a satisfying, crunch and tender meat inside. Check out how to make this Nagano specialty at home!

Ingredients for 1-2 servings:

1 chicken thigh
2 tsp each of grated garlic & ginger
1 tbsp each of sake, mirin, soy sauce
Salt & black pepper
2 tbsp of starch

Optional garnish:
Cabbage
Lettuce
Red Peppers
Red Onions
Lemons
Mayo
Shichimi (seven-spice)
