Somen Salad! Refreshing & Satisfying Cold Noodle Dish

Somen is a super thin noodle, typically eaten cold in the summer in Japan. It can be dipped in mentsuyu like soba, or can be eaten as a salad like this! I'll show you how to prepare the toppings and a sesame and soy dressing. This version of somen salad is popular in Hawaii too.

Ingredients for 1-2 servings:

1/2 pack of somen
1-2 cucumbers
1 carrot
2-3 leaves of lettuce
2 eggs
1 block of kamaboko or imitation crab
Green onions

4 tbsps of soy sauce
4 tbsps of vinegar
2 tbsps of sesame oil
2 tbsps of mirin
1 tsp of sugar
1 tbsp of sesame seeds
