WHAT I EAT IN A WEEK When I Feel Unmotivated (realistic)
HI BBY! This what I eat in a week is the most realistic video I've ever filmed... because starting college again next week, developing a knee injury, and just feeling "MEH" left me feeling unmotivated to cook & stay active... and you know what? That's OKAY!
In this video, I'm showing you everything I eat in a week and how I workout when I feel unmotivated, plus lots of easy & healthy recipes that are super quick to make! Also stay tuned for next week's what I eat in a week, busy college student edition!

BROWNIE GRANOLA RECIPE:
-3 cups rolled oats
-1/3 cup cocoa powder
-1/2 cup maple syrup
-1/4 cup coconut oil
-1/2 cup almond butter
-1/2 cup chopped walnuts
Flatten on a pan & bake at 350 for 20-25 min. Cool for 10 min then break into clusters!
VEGAN MAC & CHEESE RECIPE:
-1 large butternut squash, peeled
-4 to 6 large potatoes
-1/3 cup nutritional yeast
-1/2 cup raw cashews, soaked in water for a few hours
-salt, pepper & garlic powder
-1/2 tsp mustard
Boil the potatoes and squash until soft. Drain most of the water and blend with the other ingredients, then simmer for a few minutes until thickened. Pour this sauce onto pasta or use instead of cheese on top of tacos!
