吃不完的红烧鱼,放凉隔夜,便会凝结成鱼冻,再配上热乎乎的米饭,这大概是许多人难忘的童年回忆之一了。宋朝时人们会将这种凝结的美味单独制作,称之为“水晶鲙”。鱼冻形态晶莹,质地娇软,调味辛辣酸爽入口醒神,故又名曰“醒酒冰”

▋配料
鱼冻:fish jelly
鱼鳞一碗(草鱼鲤鱼或青鱼),a bowl of fish scale
大黄鱼一条约500g,500g larimichthys crocea
盐1/2小勺(蒸鱼用),1/2 salt (for steam fish)
花椒1大勺,1 tbsp szechuan pepper
小葱3根,3 spring onion
姜1小块,a small piece of ginger
陈皮1小片,1 piece of drried citrus peel
盐1/2小勺(鱼汤用),1/2 tsp salt(for soup)
米酒2大勺,2 tbsp rice wine
吉利丁片1/2片(选用),1/2 piece of gelatin
调料:condiment
小葱1根,1 spring onion
蒜头2瓣,2 cloves of garlic
腌藠头3个,3 Allium chinense
韭菜2根,2 chives
香菜1根,1 coriander
香醋2大勺,2 tbsp rice vinegar
生抽1大勺,1 tsp light soy sauce
香油1小勺,1 tsp sesame oil
