Paprika Rubbed Pork Tenderloin and Chicken Breasts | Valentine's Day Meal

We finish off our 3 part mini series with a delicious main dish. Paprika rubbed pork tenderloin or chicken breasts are perfect with both the candied sweet potatoes and the salted potatoes. This dish takes about 45 minutes from start to finish, and this does include cleaning the tenderloins and breasts. We like our pork tenderloin a bit on the medium rare side, and 9 minutes in that hot oven with convection is perfect for that. If you like your pork more on the medium side, add an additional minute or two to the cook time.

Paprika Rubbed Pork Tenderloin or Chicken Breasts
2 whole pork tenderloins, trimmed and sliced crosswise or
1 skinless, boneless chicken breast per person
1 tablespoon smoked paprika
1 tablespoon sweet paprika
½ teaspoon cayenne powder
1-2 tablespoons fresh thyme or ½ tablespoon dried thyme
2 teaspoons kosher salt
Mix spices and coat chicken breasts. Let them marinate in the spice blend for at least two hours in the fridge.

Heat oven to 450°F, 230°C, gas mark 8. In a heavy, oven proof skillet, heat 2 tablespoons canola or vegetable oil until it shimmers, skillet should be approximately 450°F or 230°C. Cook pork tenderloins for 2-3 minutes per side on three sides. Cook chicken breasts for 1-2 minutes per side. Cook meat in batches if necessary. Return all the meat to the pan and place the skillet in the oven. Roast pork tenderloins for 8-9 minutes and the chicken for 10-12 minutes. Pork tenderloins should still be slightly pink on the inside. Chicken should be fully cooked.

Pan Sauce
7-8 cloves of garlic, sliced
1T honey
¾ cup chicken broth
2T sherry vinegar
½ cup cubed butter

Transfer pork or chicken to a plate, cover to keep warm, and put the skillet back on a medium-high burner. Add garlic to the pan drippings and sauté for a minute. Add honey and heat for another minute. Pour in chicken broth and sherry vinegar and bring contents to a gentle boil for 4-5 minutes. Add cubed butter, stirring until butter melts and sauce thickens. Slice pork or chicken into thin slices and ladle sauce over top.
