Hot German Potato Salad | Grandmother's Recipes

If it’s potato salad you want, but the cold weather has you wanting hot food, this hot German potato salad will hit the spot. It’s another recipe from my grandmother’s collection. She liked it a bit sweeter, so if you prefer a less sweet potato salad, cut the sugar in half. However you decide to eat it, you’ll be glad you did.

Hot German Potato Salad
2½ pounds, 1kg, russet potatoes, peeled and cut into bite sized pieces
½ pound of bacon, sliced into ½ inch thick pieces
1 small onion, diced
3 tablespoons, 22g, flour
1 tablespoons celery seeds
1 teaspoon salt
½ teaspoon black pepper
½ cup, 118ml, cider vinegar
1⅓ cups cold water

Simmer peeled, cubed potatoes until tender, not soft, when pierced with a sharp knife. Too soft potatoes will fall apart in the sauce. Drain and set aside when done. Fry bacon in a large skillet until crispy, do not drain any grease. Add onions and cook until they are tender, about 3 minutes. Add the flour and cook, stirring constantly for 3 minutes. Add the celery seeds, pepper and salt and stir to combine. Add the vinegar and water and stir. Stir in the sugar and cook and stir until they sauce is thickened and begins to bubble. Gently fold in the drained potatoes. Serve immediately.
