Chicken steam roast hostel menu style

Chicken steam roast, daal and roti is a popular weekly menu at most hostels in Pakistan.
No body likes to miss this dinner.
A very simple but delicious steam roast recipe.

Ingredients

Chicken | 6 – quarter pieces of chicken, I used 4 leg and thigh and 2 breasts
Yogurt | 1 cup
Ginger garlic paste | 3 Tbs
Vinegar | 1 Tbs
Chaat masala |1 tsp
Black salt (kala namak) | 1/2 tsp
Salt | 3 tsp (to taste depending on size of your chicken pieces)
Roast masala | all

Roast masala
Dried red chili | 6
Cumin(zeera) | 6 tsp
Coriander (dhania) | 6 tsp
Roast on low heat for 2-3 minutes.
When lightly brown and fragrant, grind into powder.

Make small cuts on the chicken, this helps the marinade to penetrate and also helps in even cooking.
Marinate the chicken in yogurt and the above ingredients for atleast 2-3 hours, best done overnight.
Deep fry the marinated chicken on high heat, don’t worry about cooking the chicken at this point,
We are only trying to seal the chicken and get good color.
Have a pot on medium heat.
Keep adding the fried chicken to this pot on medium heat and keep it covered to retain the steam.
When all chicken is fried, let it cook on medium low heat with tight lid on for 35 – 40 minutes.
Serve immediately.

Do not add any water or oil to the pan.
Enjoy with roti and moong masoor daal.
