Lebanese rice with chicken
Riz ala Dajaj is a traditional Lebanese dish.
Riz or rice in this dish is seasoned with seven spices,
Topped with succulent chicken.
Sprinkled with golden fried almonds, raisins and pine nuts.
Served with tzatziki.
Step 1 |soak rice
Step 2 | make chicken stock
Step 3 | Lebanese 7 spice
Step 4 | cook rice
Step 5 | fry nuts and chicken
Ingredients
Step 1
Soak 1 kg (4 ½ cup) basmati rice
Soak for around 1 to 2 hours.
Step2
Take 1.5 kg chicken, you can choose full chicken or your favorite pieces.
Add 10 cups of water.
Onion | 1
Garlic | 9 cloves
Ginger | 1 inch
Salt | 1 tsp
Cinnamon(daalcheeni) | I stick
Bay leaf(tezpatta) | 3-4
Cardamom(ilaichi) | 3
Cloves (laung) | 7
Bring to boil on high heat.
Remove any impurities that float to the top.
Keep boiling on high heat for 15 minutes.
Reduce heat to low and simmer for 45 minutes.
Remove chicken from stock.
Strain the stock. You should be left with around 7 cups of stock.
If less, add water, if more, reduce on high heat.
Step 3
Lebanese 7 spice
Cinnamon (dalchini) powder | 3 tsp
Black pepper (kali mirch) powder | 1 tsp
Cardamom green (ilaichi) powder | 1 tsp
Cumin (zeera) powder | 1 tsp
Coriander (dhania) powder | 1 tsp
Cloves (laung) powder | ¼ tsp
Nutmeg (jaiful) powder | ¼ tsp
Step 4
Cook rice
Heat ¼ cup of oil in a pot.
Add ½ onion finely chopped.
Fry till golden.
Now add 1 Tbs of crushed garlic or garlic paste.
Drain the soaked rice, add to the pot.
Fry the rice for a few minutes.
Add the 7 spice.
Salt | 2 tsp
Chicken powder | 1 Tbs
Pour in the stock.
One and a half ( 1 ½)cup of stock for 1 cup of rice.
I added 7 cups of stock to 4 ½ cups of rice.
Bring to boil on high heat.
Reduce heat to low.
Cover with cloth and lid.
Cook on low heat for 30 minutes.
Close the heat.
Do not open or remove lid.
Let the rice rest for 30 minutes before serving.
Fry the nuts and chicken during this time.
Step 5
Fry nuts and chicken
1 cup | almonds
½ cup | raisins
½ cup | pine nuts
Fry on medium heat.
Remove from oil and scatter on kitchen napkin to absorb excess oil.
Fry the chicken pieces in the same oil.
Don’t cook the chicken for long, so that the chicken stays juicy.
Serve
Layer a wide dish with rice.
Top with chicken.
Sprinkle with fried nuts and raisins.
Garnish with pomegranate (optional).
Serve hot.
Traditionally served with Tzatziki.
Tzatziki
Yogurt |2 cup
Cucumber | 1 cup (drain the excess water)
Garlic | 2 cloves crushed
Salt | 1tsp
Lemon juice | 1 Tbs
Black pepper | ½ tsp
Mint | ½ tsp
Dill for garnish (optional)
Mix all the above ingredients.
Serve with the Lebanese rice.
