Durnave Aunty’s Delicious chocolate cake | cake and icing

I have loved to bake ever since I can remember.
It was Durnave aunty who opened a new door into the world of baking.
She taught generously and passionately.
I have learnt a lot from her.
Sharing Durnave Aunty’s Chocolate cake recipe.
Chocolate cake

2 cup | flour
2 cup | sugar
3 Tsp | baking powder
8 | room temperature eggs separated
½ tsp | salt
¾ cup | oil
¾ cup | cocoa powder
1 Tbs | instant coffee
¾ cup | boiling water
Method

Sift together salt, sugar, baking powder and flour.
Separate 8 eggs.
Mix cocoa powder and coffee in hot boiling water.

Add the egg yolks, oil and cocoa mixture (still hot) to the sifted flour.
Mix well.

Whisk all the egg whites to soft peaks.
Fold into the cake batter in two batches.
Bake at 350F | 180C for 35-40 minutes.

Frosting

250g | unsalted butter at room temperature
3 cup | confectioner sugar
2 Tbs | cocoa powder
½ tsp | vanilla
150g | chocolate (60%) melted in the microwave for around 2-3 minutes, mixing every 30 seconds
3 Tbs | milk

Sift the sugar and cocoa powder together.
Beat the butter for 3-4 minutes.
Start adding the sifted sugar and cocoa one cup at a time.
Keep scraping the sides in between adding the sugar.
Add the melted chocolate and vanilla.
Put in around 3 Tbs of milk at the end.
You can add more milk depending on the consistency of the icing.
