Ammi’s Famous Dahi Bhallay | make and freeze for Ramadan | dahi baray | dahi bada | dahi vada

I love Dahi Bhallay.
I have enjoyed them at Anarkli Lahore, Chandni Chowk Delhi, South Hall London,and Meena Bazaar Dubai.
But none of them beat Ammi’s Dahi bhallay.
Sharing her recipe.

Ingredients for making bhallay

1 cup | maash daal
¼ cup |moong daal
1 tsp | salt
2 tsp | ginger and garlic paste

Method
Soak the daal over night, at least 6-8 hours
Wash and drain
Grind with 1 cup water into a pasty consistency
Adjust water if needed
Add salt and ginger garlic paste
Whisk for at least 5 minutes
Whisking makes light and fluffy bhallay
Fry on medium high heat until golden brown
Cool completely

Bhallay can be frozen at this point

Soak the bhallay in boiling hot water for at least 1 hour
Add 1 tsp of salt

Bhallay Masala
1 tbs | coriander (dhania)
1 tbs | cumin (zeera)
¼ cup | dried red chili
Roast on medium heat until fragrant and slightly brown
Grind together

Yogurt for dahi bhallay

500g | yogurt
½ cup | milk
3 tsp | sugar
1 tsp | salt
½ tsp | mint
Whisk together

Assembly
Squeeze water out of the bhallay
Layer a wide shallow dish with yogurt
Place bhallay
Cover the bhallay with yogurt
Pour imlee chutney
Garnish with dried mint
Sprinkle bhallay masala on top
Enjoy 😋
