Lamb Leg Roast | Chickpea Pilaf | Eid Special Menu | Simple Step by Step Recipe | ASMR Video
Ingredients for Lamb Leg
2 kg | Lamb or goat leg
12 cloves | garlic
1 inch | ginger
4 Tbs | lemon juice
4 Tbs | yogurt
4 Tbs | tomato paste
2 tsp | salt
3 Tbs | cumin powder
3 Tbs | coriander powder
3 Tbs | dry red chili flakes
Method for Lamb Leg
1. Score the lamb leg on both sides.
2. Make a paste of the marinade ingredients.
3. Apply the marinate to the meat.
4. Marinate for at least 12 hours.
5. Heat ¼ cup of oil in a pot.
6. Fry the leg on both sides for a few minutes on high heat.
7. Add ½ cup water.
8. Reduce the heat to low, cover and cook for 3 to 4 hours, or until the meat is so tender that it starts to fall off the bones.
9. Turn sides every hour.
10. Lamb leg is ready.
Ingredients for Chickpea Pilaf
2 cups | basmati rice (washed and soaked for 2 hours)
1 can (500gm) | canned or boiled chickpeas (garbanzo beans)
½ cup | oil
½ cup | chopped onions
2 tsp | green chili sliced
7 cloves | crushed garlic
2 tsp | salt
2 tsp | chicken powder
1 tsp | cumin seeds
3 pods | whole cardamom
¼ tsp | clove powder
½ tsp | cinnamon powder
½ tsp | nutmeg powder
½ tsp | white pepper powder
Method for Chickpea Pilaf
1. Fry the chopped onions in oil until golden brown.
2. Add Cumin seeds, cardamom, and crushed garlic.
3. Add the chickpeas and rice with 3 cups of water.
4. Now put in salt and all the spices.
5. Bring to boil, cook on high heat for 3 minutes, then reduce the heat to low, cover and cook until rice is cooked (20 minutes).
6. Let the rice rest for at least 10 minutes before serving.
Mamas Famous Vegetables 750gm | potatoes
4 | tomatoes
4 | peppers
¼ cup | olive oil
1 tsp | salt
½ tsp | crushed black pepper
Method
1. Heat oil in a pan.
2. Add washed potatoes then tomatoes and peppers on the top.
3. Add salt.
4. Cover and cook on low heat for 30 to 45 minutes or until potatoes are fully cooked.
5. Sprinkle with freshly crushed black pepper before serving.
