How to Make Ancient Grain Sourdough - Step by Step

Equipment Needed:
1 or 2 Dutch Ovens w/ Lids
2 or 3 Mixing bowls (glass or ceramic) with 1 or 2 Cloth napkins
OR: 1 Large Mixing Bowl & 1 or 2 Proofing Baskets w/ Liners
1 Tea Towel
Parchment Paper
Plastic Wrap
Spatula
Disposable glove (optional)
Wire racks for cooling
Digital Scale
Optional:
Scissors or Bread Lame for Scoring
Ingredients:
1200g Ancient Grain 1:1 Replacement Flour https://enjoyithealthy.com/products/ancient-grain-1-1-replacement-flour
24g Salt (I use Pink Himalayan)
300g active Starter
900ml Water (room temp is fine)
Rice Flour for dusting (can also use AP, Bread Flour or Ancient Grain Flour)
Note about Starter:
Feed at least once/week with 4oz flour & 4oz water & store in fridge. If you see a bit of grayish water, it's ok & just pour off. If it turns pink at any point, you should discard.
When preparing to make sourdough, feed the starter either the night before or 4-5 hrs prior making your dough, making sure it has doubled in size.
Storing your bread: This bread freezes beautifully! you can double wrap it (i use grocery bags) & pop it in the freezer whole or you can slice it first and take them out slice by slice. After a loaf is completely cooled, I will slice & store (wrapped in a plastic bag) in the refrigerator for prolonged freshness. Remember, this bread does not contain any preservatives! You could also use those cloth bread bags if you plan to go through the loaf rather quick but it will dry out much faster.
