my version of Carne En Su Jugo (Beef in green salsa)
Ingredients
- 3lbs Pot Roast beef (Diesmillo)
- Bacon
- 4 Yellow Peppers (Chile Gueritos)
- 6 Small Onions (Cebollitas)
- 2 Hatch- Anaheim Chiles
- Salsa Verde
- 10 small Tomatillos
- 4 Jalapenos
- 1 Hatch- Anaheim Chiles
- 1 Onion
- 4 Garlic
- 1/4 bunch of Cilantro
- Seasonings
- 1/2 tablespoon Salt and Pepper + sprinkle after
- 1/2 tablespoon Chicken bouillon + 1/2 tablespoon after
- 1 tsp Cumin
Instructions
1. Once you have gathered all of your ingredients, You can start making the Salsa Verde.
2. To roast vegetables, add them to a hot skillet or pan. Roast on both sides of jalapenos, tomatillos will take longer to roast. Once you see a char, remove them from the heat. The garlic will take the least amount of time, therefore I added them last. This will take about 15 minutes, all depending on the level of heat.
3. Char the Anaheim Chiles over the fire. Once they have a nice color, remove them and add them to a bag. Let them cool down for about 10 minutes. The bag will help trap the heat of Chile and allow moisture to build up, this will make it easier to peel the charred outer layer.
4. On the stove, place a skillet or pan over medium-high heat. Cut bacon into strips to add to the skillet. Cook the bacon. Remove before they get crispy. Add into a bowl then set aside.
5. Into the same pan that you cooked the bacon in add the small onions and yellow peppers until they soften and change colors. Remove and set aside once they are finished.
6. Cut the beef pot roast into cubes that are approximately 1-2 inches.
7. Add beef to the pot, it is okay if they are crowded. This will allow to releases the moisture.
8. Cook for about 8-10 minutes on Medium heat.
9. While the meat is cooking, add vegetables in a blender along with seasonings and 1 Anaheim Chile. Blend this until smooth.
10. Add the Salsa over the meat that is cooking, then proceed to add the same seasonings over the beef.
11. Bring the heat to medium-high to cook for about 3-5 minutes then cover with a lid and reduce to simmer for about 1 hour to 1 hour 30 minutes. To allow the beef to become tender.
12. Once the meat is finished, taste the sauce and verify salt levels are to your liking.
13. To place, add meat to a plate or bowl and use bacon, small onions, and yellow pepper to garnish.
This recipe commonly has cooked beans that you can add over the beef.
