Filipino Vegetable Spring Rolls | Lumpiang Gulay + Spicy Vinegar Dipping Sauce | Vegan

Lumpia otherwise known as Filipino spring rolls come in different varieties - Lumpiang Sariwa (fresh spring rolls), Lumpiang Shanghai (fried spring rolls filled with meat, Turon (dessert spring rolls filled with ripe plantain with or without ripe jackfruit) and Lumpiang Gulay (fried vegetable spring rolls). No filipino gathering/party is complete without lumpia and these are the first to go, literally gone in seconds!

Lumpiang Gulay (Filipino Vegetables Spring Rolls) Ingredients:
Filling:
½ small cabbage | 400g, thinly sliced
1 medium carrot | 225g, julienned
1 medium sweet potato | 180g, julienned
1 medium chayote squash | 225g, julienned
1 small jicama/singkamas 250g, julienned
10 pcs green beans, julienned
1 small onion, thinly sliced
6 cloves of garlic, minced
salt, soy sauce & ground black pepper, to taste

other ingredients
spring roll wrapper *see note below
1-2 Tbsp oil for stir-frying
oil for deep frying

Spicy Vinegar Dipping Sauce:
2 cloves garlic, minced
1 small red onion or shallots, finely chopped
½ tsp salt
½ tsp brown sugar
½ tsp ground black pepper
½ cup cane vinegar
1 red and/or green chilies, chopped
