Stir Fry Garlic Scapes| Best way to keep scapes GREEN|蒜薹炒肉

Garlic Scape has pretty strong garlic flavor, a healthy ingredient. Keep it green after cooking is very important. Here I have this cooking method has been used for more than twenty years. DO NOT keep stirring it! Just STEAM it for a few minutes, let the steam cook it. This way can get meat tasty with dark colored sauce and garlic scapes flavor but keep scapes green! When you serve it to the table with “Green Veggie with Dark Caramel colored Meat” should be very attractive! If you don’t eat pork, you can switch it to Chicken, Shrimp , or Ferm Tofu.

Ingredients:
680g (1.5 pound) garlic scapes
150g skinless pork belly
5g (1 tsp) diced ginger
5g (1 tsp) sweet bean paste( dark colored paste fermented with Flour)
15g (1 Tbsp) light soy sauce
7g (1/2 Tbsp) dark soy sauce
115g (1/2 cup) room temperature water
2g (1/2 tsp) salt
2g (1/2 tsp) sugar
