AGEBITASHI - Deep fried various vegetables soaked in dashi broth - Japanese Cooking - 揚げびたしレシピ

Agebitashi means deep-fried and soaked in dashi and soy sauce-based broth. Deep-fried vegetables absorbing the savory broth are crispy and rich. In addition, it is possible to preserve them for a few days in a fridge so good for meal-prep.

The recipe is the summer version using summer vegetables in Japan like eggplant, kabocha squash(Japanese pumpkin), zucchini, paprika. It looks colorful and beautiful so you can enjoy both tastes and looks themselves.

You can use any vegetable whatever you want, and it is delicious whether cool and warm.

◆ Ingredients for 2-3 servings:

1 eggplant
1 zucchini
100g kabocha squash (Japanese pumpkin)
a half red paprika
a half yellow paprika
2 cups of vegetable oil

- Dashi broth
500ml water
5g dried kelp (5 cm x 10 cm)
10g dried bonito flake
3 Tbsp soy sauce
3 Tbsp mirin
