Easy Jam Tart - October Pie collaboration
Hi everyone :)
I hope you'll enjoy this super easy and very delicious pie recipe. It comes together in a matter of minutes and you only need a couple of ingredients. My mum used to make Jam Tart when I was a little girl. I'm using sweet shortcrust pastry, I think mum always used Flaky Pastry and it is equally as good with flaky. I used strawberry Jam, but mum always used Raspberry or some other homemade Jam. I think the only Jam I didn't like as a child was gooseberry jam. I hope you'll try this Jam Tart. :)
Recipe:
2 x sheets of sweet shortcrust pastry
1 cup of Jam of choice
1 - 2 Tablespoons milk (to brush the top of the pastry
1. Preheat the oven to 180 C or 375 F. Line the pie dish with parchment paper.
2. Lay the first sheet of defrosted (chilled) pastry in the base of the lined pie dish. Round of the corners if using square pastry.
3. Use the scraps of pastry to make a nice edge to the pie.
4. Fill the pie crsut with the jam, spreading to the edges.
5. Either cut strips with the remaining sheet of pastry ror use a lattice top cutter like I did. Make sure the pastry is still cold and flour lightly one side before cutting.
6. Brush the pastry with milk, sprinkle with a teeny amount of sugar if desired.
7. Place into the hot preheated oven and bake about 35 minutes or until the top is cooked and it all looks and smells done.
8. Let the pie cool quite a bit, as the jam becomes runny otherwise. Serve with vanilla ice cream or just as it is with a nice cup of tea.
