Sweet Orange Marmalade
Sweet Orange Marmalade
Recipe:
1 kilo of Oranges
5 cups sugar
2 teaspoons citric acid
2 Tablespoons Lemon Juice
5 cups water
Method:
1. Thinly peel the rind from all the oranges. Carefully remove all the pith. Place half the pith in a small deep bowl. Pour over two cups water and dissolve the citric acid in this mixture. Slice the rind thinly. Cut all the oranges in half and then thinly slice the flesh.
PLace the rind into a largish bowl with 3 cups of water and add the sliced orange flesh.
Add any seeds to the pith bowl.
Cover both bowls with clingfilm or a beeswax wrap and leave overnight in a cool place (not refrigerated).
2. Next day: Pour the liquid only from the pith bowl into the bowl with the orange flesh. Take a clean square of muslin and tie up half the pith and seeds. Secure with clean cotton thread.
3.Place the contents of the bowl into a large enough saucepan. Add the muslin bag and 2 Tablespoons lemon juice. Cover with the lid and bring to the boil. Then turn down to a simmer and cook 40 minutes.
4. Remove the lid from the saucepan, add the sugar and stir to dissolve. Once fully dissolved bring the heat up to a rolling boil (about 3/4 mark setting on the stove). Continue boiling and stirring occasionally for about 35 minutes or until it starts to set when tested. I normally start checking it after 25 minutes. Make sure the oven is on 100 C. Pace clean washed jars in the oven to heat. Pour boiling water over the rings and seals that will be used.
5. Once set is reached, remove from the heat. Bottle and seal. Enjoy :)
